Why most household steak disappoints (and what we changed)
Walk the meat case at your nearest supermarket and you will see a lot of red and very little white. The white is the part that matters. That intramuscular fat (what cattle people call marbling) is what makes a steak taste like a steak instead of a piece of warm gym shoe. Most grocery-store steak is USDA Select or low-end Choice, which means the marbling is thin or absent.

That grade is not a label we invented. The USDA Choice grade requires "modest" marbling in the ribeye section between the 12th and 13th ribs, scored against a standardized chart (USDA AMS grading reference). USDA Prime, the top grade, requires "slightly abundant" marbling and accounts for roughly 5% to 8% of US beef production per USDA Agricultural Marketing Service data. We pull from the upper end of Choice, the part most retailers price out of their everyday case, and offer Prime upgrades on select boxes.
A few things that are not marketing:

- NY Strip. Bold beef flavor, firm bite, even marbling. Forgiving on a hot pan or a grill. Our most-ordered cut and the one we send to first-time customers because it is hard to mess up.
- Ribeye. Fattier than the strip. More marbling, richer mouthfeel, more drama in the pan. The center "eye" of the muscle is tender; the outer cap is the part steakhouse cooks fight over. Cook hot and fast.
- Sirloin. Leaner still. Strong flavor, less marbling, better value per pound. A weeknight steak. Good in a stir-fry, a salad, or sliced thin over rice.
Cooking and sourcing, so the box pays off
A premium steak cooked badly is just an expensive lesson. Two things make the difference at home: temperature control and rest time.
For the NY Strip, a cast-iron sear at high heat with butter, garlic, and thyme gets you a steakhouse crust. Pull at 125F internal for medium-rare and rest seven to ten minutes. Our how to cook NY Strip guide walks through the timing.
For the Ribeye - all you need is salt (and maybe pepper). The steak itself has an incredible flavor. Rest it for 7+ minutes after cooking - that's the secret sauce.
On sourcing: USDA Choice and Prime are graded the same way every time, regardless of which supplier ships the meat. The grade tells you something concrete about the marbling and the maturity of the animal. Always thaw before cooking. Frozen steak sears unevenly and the inside will be overcooked by the time the outside browns. Move the vacuum-sealed steak from the freezer to the refrigerator about 24 hours before you plan to cook. For thicker cuts like a 14oz Ribeye, give it 36 hours. Pat the steak dry before it hits the pan.
